Mastering Nutrition (1985)

English | PDF | 1985 | 346 Pages | ISBN : 0333354311 | 23.16 MB

This book is a self-contained factual presentation of the theoretical and practical principles of human nutrition through a chemical, physical and biological approach which assumes no previous knowledge.
Nutrition and health go together, and the book will interest the general reader who eats to live, and those who produce, prepare, process or are otherwise concerned with food. Parents, school pupils, people preparing meals in the home, farmers, nurses, home economists, caterers, hoteliers and food-processing workers, will find sufficient to meet the needs of various examination syllabuses which have a food and nutrition content.
I have attempted to direct my presentation towards an international understanding of the world problem of nutrition, in feeding a rapidly growing population of more than four billion on an inadequate and unequally shared food supply – a world where one in ten of us is under- fed and hungry, and two in ten are overfed.
